No time for a healthy dinner? This is what I grabbed on the go today from @yorkvillewfm (Whole Foods Yorkville).
They have an awesome salad bar - seriously it goes on for ages..SO MUCH STUFF! The delicious things they have will dazzle your eyes and will keep your belly full of nutrients all day! If you live or work around Yonge & Bloor and you don’t know what i’m talking about - you should most definitely take the time to familiarize yourself with this salad bar! No excuses not to eat healthy - fuel your body and your brain right!
The reason I chose to have a lighter dinner was this - I fuelled up with complex carbs, healthy fats and protein midday (recipe here - http://iamyogalinda.tumblr.com/post/18389609264/weather-is-amazing-surprise-spring-day-in-toronto) so when I arrived home I wanted to get a lot of greens inside my belly to help me recover and reduce any inflammation in my musculature after such an intense workout. I included lots of greens, chickpeas and soy beans for protein - tried to load up with a rainbow of food colours.
I also chose something light because I didn’t want to fall asleep with a full stomach or have a heavy meal that would require more work to digest when I’m in my most sedentary phase of the day (working on my laptop arrghhh….)
This was the perfect light meal after a 2.5 hour 70K ride this aft!
